Tasty prawn pesto pasta. Great for weeknight dinners!

30 Minute Prawn Pesto Pasta

This is a great weeknight dinner that you can make with your family's favourite pasta noodle. It's loaded with veggies and sure to please everyone. If you're not big prawn fans you can sub for chicken.

  • 4 cups Pasta
  • 340 grams Frozen Uncooked Prawns devined and shelled
  • 1/2 Sweet Onion diced
  • 2 Portabello Mushroom Caps diced
  • 1 Red Peppers diced
  • 1 Zucchini diced
  • 200 ml Pesto
  • 1 1/2 tbsp Garlic minced


  1. Boil water and begin to defrost prawns by filling bag with room temperature water. Change water as prawns defrost and water turns ice cold. 

  2. Cook pasta according to package directions, drain and set aside. 

  3. Heat oil in a pan on medium heat. Fry onions for 5 minutes. Add minced garlic and fry for an additional minute. Add 2 tbsp of pesto, mushrooms, red pepper and zucchini. Fry until cooked, approximately 8 minutes. Add thawed prawns and fry until cooked through, approximately 3 minutes. 

  4. Add vegetable and prawn mixture to cooked pasta in a large pot. Mix together with remaining pesto sauce on medium heat. Once thoroughly mixed serve with parmesan or nutritional yeast.
