I fell in love with chia pudding the first time I had it, then proceeded to completely forget about it until I came across it again. A few weeks ago I stumbled across @megs.veganlife‘s chia pudding recipe on Instagram and rediscovered my love for it. Now that I’m eating dairy free I’ve found it hard to find a yogurt alternative that I like. This recipe has been my new go to with its smooth creamy texture, and it’s also packed with omega-3’s, fibre, iron, and calcium. Add in the fruit and nut breakfast bar, some berries and seeds, and you have yourself a super nutritious and delicious breakfast.
This is a make ahead breakfast recipe that you can enjoy all week long. You’ll need to prepare by making the chia pudding and breakfast bars at the beginning of the week. Then in the mornings you can mix everything together with whatever fruit or berries you have on hand and you have a great tasting breakfast that is jam packed with nutrients. If you like things on the sweeter side you can add any kind of liquid sweetener like honey or agave.

Vanilla Chia Pudding With Berries and a Fruit and Nut Breakfast Bar
- 1 cup almond milk coconut milk also works great!
- 2 tbsp chia seeds I like a runnier pudding, add another tbsp if you like it thicker
- splash vanilla
- 1 breakfast bar
- 1/2 cup berries
- sprinkle assorted seeds I use poppy seeds and sesame seeds, but you can use any seed mix
Mix everything together in a jar or container and let soak for 5 minutes. Stir and let sit overnight in the fridge.
Scoop desired amount of chia pudding into a bowl.
Add a breakfast bar, and top with berries and seeds.
